BBQ'd Baby Eggplants

Since this wave of beautiful weather has graced us with its sweet smelling air and sun kissed shoulders, Mr. S and I have been enjoying some wonderful meals on the BBQ.
The other night we tried out a few new items, including these sweet baby eggplants. I just love their vibrant purple color, which changed shades while they baked to be soft and delicious. We paired them with a soy/chili/garlic sauce which was a perfect contrast to their slightly bitter taste.

We have two sets of amazing friends visiting and staying with us this weekend, so there is sure to be many bbqs over the next couple of days - hooray!
